Not only the first modern urban winery in Paris, but these guys have planted the first new vineyards in several generations on Île-de-France, close to Versaille. Till those vines bear fruit (the first harvest is in 2019), winemakers Adrien and Julien source grapes from the Languedoc-Roussillon, Provence, the Rhône, Bordeaux and Corsica, then make the wines at their urban winery in Montreuil.
It’s an inspirational and ambitious tale, building on the little-known yet long history of winemaking in Paris (there were 40,000 hectares of vines in the region in the 19th century).
Their Don Paris Brut is named after Done Paris Peroni, a legendary 19th century Corsican winemaker whose Vermentino bubbly was celebrated near and far. Adrien is his descendant, and he has created this traditional method sparkling wine in memory of his great-great-grandfather.
The Vermentino comes from Provence, planted on chalky clay soils. The secondary fermentation occurs with no additional dosage, just the original Vermentino juice from the first press. There's no oaking, and the wine is kept on the lees for four months prior to disgorgement.
The aroma is intense and noticeably Vermentino, all floral and ripe stone fruit, a remarkable experience when combined with the familiar autolytic notes you get with the traditional method.
