Tim Manning is the English winemaker in charge at Valdonica, an organic producer in the high hills of the Maremma, southern Tuscany. Following a stint in a wine shop he went on a whim to Tuscany for some work experience at the famed Riecine winery in Chianti, swiftly rising to become assistant winemaker. There was no looking back from there, and he's since worked in Oregon, New Zealand and created his own range of Italian wines called Vinochisti.
Saragio is 100% Sangiovese from Valdonica's Sassofortino vineyard, planted on volcanic soils around 500 metres above sea level. The wine spends 18 months in medium toast French oak barrels, then another 18 months refining in bottle before release. It's a magnificent Maremma Sangiovese with awesome depth, brilliantly integrated tannins and strong ageability - drink now or stick away for another 5-10 years and witness the development.
