Seyit Karagözoglu founded Paşaeli in 2000, aiming to revive and celebrate the forgotten native grapes of Turkey. Papazkarasi is an ancient grape native to Thrace, translating as "the priest's black grape", perhaps because it originated in monastic vineyards. This wine comes from a single vineyard close to the Greek border, planted on clay-loam soils. Wild ferment in stainless steel then 7 months in French oak. Peppery spice, intense red cherry, some pot-pourri and soft tannins. Gorgeously unique!
