A Catholic monastery in the famed Mosel valley, making wines since 1673 (in a place with vineyards dating back to the 12th century), extreme terroir in some of the northernmost vineyards in Europe, and a young Australian winemaker (the only one in this neck of the woods) with big ideas: mix it all together and you have the very modern incarnation of Kloster Ebernach.
This is a brand-new, dry Pinot Blanc entirely from the monastery's own biodynamic vineyards (this vintage is certified). Made in large, old French oak barrels, left on the lees for 6 months to add some richness and texture, unfined and unfiltered, and barely any sulphur added throughout the process. The 2016 vintage was a trying one for organic growers with lots of rain midsummer, but a dry and warm late summer and autumn resulted in lovely consistent ripening and some terrific wines. This is such a wine, and a brilliant food pairing option given Pinot's innate texture and minerality.
