Domaine Martinolles Pinot Noir 2018
Domaine Martinolles is in Saint-Hilaire, on an elevated vantage point a short distance from Carcassonne. It's here that monks at Saint-Hilaire Abbey began making bottle-fermented sparkling wines in the 16th century, long before the likes of Dom Perignon in Champagne!
The Martinolles vineyards are farmed sustainably and certified Terra Vitis. While the climate is warm and Mediterranean, they do have altitude and maritime breezes to moderate the heat and so achieve balanced ripeness and acidity, crucial for such a delicate, fickle variety as Pinot Noir. This is a charming, ripely fruited style of Pinot and terrific value.
