His lovely Montagne Saint-Émilion, Achille, comes from an old family plot of just half a hectare, planted on gravel with deep clay and biodynamically farmed.
Half-and-half Merlot and Cabernet Franc, the grapes are hand-picked and fermented naturally in 500-litre old oak barrels, where the wine matures for two years.
It's powerful and fruit-forward with fine tannins, the epitome of great St-Émilion but true to form for Olivier it stands apart from the crowd.
